INGREDIENTS & PROCESSES

Q:  WHY USE ORGANIC INGREDIENTS?

A:  We use about 95% certified organic ingredients in our cookies, pies, cakes, and products are about 97% organic—from flours, to sugars, chocolate, essence, and shortening.  We believe it makes for better quality and will dually have a less taxing impact on your body.  We recognize it doesn’t translate to “cheap” products; but above all, we value clean eating and its benefits for you, your children, family and friends.   We’ll be working hard to make our products 100% organic in the near future.

Q:  HOW DO YOU KNOW YOUR INGREDIENTS ARE GLUTEN-FREE?

A:  We source our ingredients from manufacturers who certify the gluten-free integrity of their goods.

Q:  WHY USE NON-GMO INGREDIENTS?

A:  We pay as much attention to what you will put into your body as much as what we would want our own families to eat.  We don’t use genetically modified ingredients in our products.

Q:  WHERE ARE YOUR PRODUCTS MADE?

A:  We currently make all our products at a shared kitchen on our own protected-from-gluten-exposure equipment in Baltimore City, MD.

Q:  HOW DO YOU PREVENT CROSS CONTAMINATION IN YOUR ALLERGEN-SPECIFIC PRODUCTS?

A:   First, all our products are gluten-free, including our vegan and fully allergen-free goods.  Next, we are extremely diligent in our prevention measures to combat cross-contamination—during the prep and baking processes we use dedicated pans and thoroughly clean our prep stations, production equipment, and packaging area.  Our team members and family members have food allergies—we take safeguarding you our customer like you were family.

Q:  WHAT DO YOU MEAN BY ALLERGEN-FREE (AF)?

A:  That means the product contains no eggs, no dairy, no nuts, no soy, and no wheat/gluten.

Q:  WHAT KIND OF SUGAR DO YOU USE?

A:  We use mostly organic cane sugar—which is less refined that white sugar and retains more minerals and vitamins, and doesn’t cause blood sugar to spike quickly.  We also use organic light and dark brown sugar for a few of our GF cookies and pies; and in some instances, we use Sucanat, agave, or organic maple syrup in our vegan baked goods.

Q:  WHAT DO YOU USE TO REPLACE EGGS IN YOUR VEGAN & FULLY ALLERGEN-FREE PRODUCTS?

A:  We often use “flax eggs,” made from flax seed meal combined with water, or ground chia seed combined with water.

Q:  ARE THERE ANY SOY INGREDIENTS IN YOUR PRODUCTS?

A:  Thankfully we can say there are no soy ingredients in any of our products nor is it included or used in any of our processes.

Q:  DO YOU USE XANTHAN GUM?

A:  We know there’s a lot of discussion around xanthan gum.  Yes, we use xanthan gum in some of our gluten-free products, and almost not at all in our fully allergen-free and vegan products.  Gluten-free baking is fickle science, especially when we work overtime to ensure the great texture and taste.  We hope to eliminate the use of xanthan gum in the very near future.

Q:  ARE ALL YOUR ITEMS NUT-FREE?

A:  No.  Some of our items contain nuts, and where they are present (most likely in some of our gluten-free products, in the form of almond meal or as chopped pecans or walnuts) we clearly label and state their presence.
